MY LATEST OBSESSION-WEIGHT WATCHERS YOGURT



O M G this yogurt is SO good! I love the other flavors too but this one is de-lish-ioso!
Sprinkled with a small amount of granola...to.die.for!
AND only 1 WW point for the yogurt and 1 WW point for the granola!
WHAT??? 2 points? HOLY MOLY!
Seriously, you guys need to try this.

AND Monday wasn't so bad....I'd take any Monday like today!
I am going to enjoy it while it lasts!

It's An Arbor Mist Sort of Friday!

Yes, you read it right....Arbor Mist...LOVE IT! Especially the Tropical Fruit one...with added fresh fruit in it! I could drink an entire bottle...but I don't! I am so glad today is Friday. It's been so slow @ work that the days seem to drag. I guess we should enjoy it while we can because soon it will be back to school physicals, shots and forms to fill out...OH JOY !
My Mom had surgery on Thursday and is doing amazing...I knew she would. Way to go Ma!!!

Today I am sharing a super simple pie! AND its so light and perfect for these hot summer days. This recipe makes 2 pies, so make one for yourself and share the other with someone special!

Mile High Lemonade Pie


  • 24 oz Cool Whip (3 – 8oz containers)
  • 2 – 14oz cans sweetened condensed milk
  • 1 -12oz can frozen lemonade concentrate (or limeade)
  • 2 graham crackers crusts

Directions
  1. In a large bowl, stir sweetened condensed milk into Cool Whip. (Do this by hand, DO NOT use a mixer – an electric mixer can cause the Cool Whip to fall which will result in a dense or even runny pie.)
  2. Next, fold in lemonade concentrate.
  3. Divide between two pie crusts and chill for at least 3 hours.

HAPPY FATHER'S DAY

OH how I miss my Daddy! He was such a good man and a wonderful father.
I thank God daily for the wonderful memories I will hold forever in my heart.
The recipe I am sharing today is in his honor.
German Chocolate cake was one of his favorites and I know if he were still
here, he would absolutely love this cake!
So...here's to you Daddy!

GERMAN CHOCOLATE BUNDT CAKE

1 bx German Choc Cake Mix
1 c water
1/2 c veg oil
3 eggs
1 can of German Choc Frosting
mini choc chips
sweetened coconut flakes
1 can of cream cheese frosting(melted)

Preheat oven to 350ยบ.
Grease your bundt pan and set it aside.
Mix cake mix, oil, water and eggs, beat until blended.
Now stir in frosting until completely incorporated.
Pour into your prepared bundt pan and bake for about 45 minutes.
Remove from oven and cool.
Melt cream cheese frosting in microwave for a few seconds
and drizzle over the cake.
Sprinkle with sweetened coconut flakes (optional)
and mini chocolate chips

FLAG DAY

HAPPY FLAG DAY !


Did you fly your flag today? One of my co-workers was all gung ho about Flag Day...she even made us Flag Day brownies...and I did not have ANY! GO ME ! OH but I wanted one...but I resisted. The diet is going really well and if I say so myself, I am proud of me! I promise to post some diet/WW recipes soon, but for today I just HAD to share this wonderful dessert. Not only is it pretty, it's also SO yummy! Would make a nice treat for your Dad for Father's Day! If my Dad were still with us, I know I would make this for him. I miss you Daddy !

BANANA SPLIT CHEESECAKE


Ingredients

  • 1 can (8 ounces) unsweetened crushed pineapple, divided
  • 2 medium firm bananas, sliced
  • 1 reduced-fat graham cracker crust (8 inches)
  • 1 package (8 ounces) fat-free cream cheese
  • 1-1/2 cups pineapple sherbet, softened
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
  • 4 maraschino cherries, divided
  • 1 tablespoon chocolate syrup
  • 1 tablespoon caramel ice cream topping
  • 1 tablespoon chopped pecans

Directions

  • Drain pineapple, reserving juice. In a small bowl, combine bananas and 2 tablespoons reserved juice; let stand for 5 minutes. Drain bananas, discarding juice. Arrange bananas over bottom of crust; set aside.
  • In a large bowl, beat cream cheese and 2 tablespoons reserved pineapple juice. Gradually beat in sherbet. Gradually beat in pudding mix; beat 2 minutes longer. Refrigerate 1/3 cup pineapple until serving; fold remaining pineapple into cream cheese mixture. Fold in 2 cups whipped topping; spread evenly over banana slices. Cover and freeze until firm.
  • Remove from the freezer 10-15 minutes before serving. Chop three maraschino cherries and pat dry; arrange cherries and reserved pineapple around edge of pie. Drizzle with chocolate syrup and caramel topping. Dollop remaining whipped topping onto center of pie. Sprinkle with pecans; top with remaining cherry.
  • Yield: 10 servings.

HEAT WAVE & FRUIT SALAD


OH EM GEE ! Is it hot or what???? Heat indexes here have been 102-104..I am SO glad I don't have to work outdoors and I feel so bad for my hubby and son who does : ( Or anyone who has to for that matter! I don't know how they do it. This would be me........
We have been praying for rain and a few of us got a small amount yesterday but no where near enough to end this drought!!! I am afraid if we pray too hard, it will start to rain and not stop OR God forbid we will get a hurricane!!! A small tropical storm would be a welcome reprieve tho! Being careful what I wish for here!!!

On Sunday, Rene' cooked lunch and Jordan and Kristen and Joshua, & Addie and Mike were all here. It was SO nice to have all my family here....made the heart feel so good and so blessed. Of course we cannot be around Joshua and NOT take any pictures. Here is one of Joshua and his Poppa....Oh how he smiles and coos for him...and Rene' just totally eats it up!

And now for a "light" recipe for you all. This is a Weight Watcher's recipe and its so light and cool. 1 serving is only 2 points!! What's not to like about that????

FESTIVE FRUIT SALAD



Ingredients:

1 cup fresh strawberries, thinly sliced
1 cup whole green grapes, washed and drained well
1 cup whole blueberries, washed and drained well
1 whole peach, peeled and cut into cubes
3 thin slices of fresh lemon for garnishing (optional)
4 cups yogurt, unflavored or WW Vanilla

How to: Mix all fruits and toss in 3 cups of yogurt. Set aside 1 cup of yogurt for toppings on salad per serving. Chill inside the refrigerator for 1 to 2 hours before eating.
